BIOACOUSTICS – A NOVEL APPROACH
The technology developed by Yeastime is rooted in a study in the field of bioacoustics, a multidisciplinary discipline that integrates physics and biology to explore and understand evolution through the consideration of mechanical pressure as a stationary factor. In the bibliography, robust evidence emerges indicating the potential of low-power mechanical pressure in stimulating cell biology. This occurs through the effect on nutrient uptake by transient sonication of the cell wall and membrane, with simultaneous removal of inhibitory metabolites from the cell surface.
Building on the study and testing of higher plant responses, Yeastime chose to focus on the ”microworld,” initiating an in-depth study of the biology of the yeast Saccharomyces cerevisae. This model organism not only plays a key role in food production for the production of consumable products, but is also a target for oil, protein and enzyme production.

At the heart of our innovation is a commitment to research and collaboration. Yeastime has partnered with the University of Tor Vergata, a leading institution in biological sciences, to pioneer advancements in ultrasonic fermentation technology. Our state-of-the-art laboratories, housed within the Department of Biology at Tor Vergata, serve as the hub for our R&D.
To further the understanding of ultrasound effects in fermentation, Yeastime is co-financing three PhD programs at the university. These programs focus on exploring:
